Hummus is really one of the great things in life. One can of chickpeas with a few other ingredients makes about three times as much hummus as you'd buy in the supermarket. Now that is value for money. This is best made the night before you want to eat it so the flavours can develop in the fridge overnight.
Time: 15 mins (+ chilling time overnight)
Ingredients:
- 1 can chickpeas
- 1-2 tbsp tahini
- 3 tbsp hot water
- 2-3 cloves garlic
- 1 lemon, juiced
- 2 tbsp olive oil
Instructions:
- Drain and rinse chickpeas and add to blender or food processor
- Blend chickpeas with tahini, water and garlic until smooth.
- Add lemon juice and blend.
- Add olive oil and blend.
Recipe Notes:
Adjust seasonings with any additional salt and pepper.
Top with your choice of delicious toppings such as:
- Pumpkin seeds
- Cumin seeds
- Smoked paprika and oil
- Plain olive oil
- Chilli oil
- Parsley
